Aunt Lena's Sugar Cookies Recipe
2 cups sugar
1 cup lard (or salted butter)
1 cup buttermilk
2 eggs
2 tsp baking powder
1 tsp baking soda
1/2 tsp vanilla
4 cups flour, plus flour for rolling

Dissolve baking soda in buttermilk.

Cream lard (or butter) and sugar until fluffly. Beat in eggs. Add vanilla and butermilk mixture and beat well. Sift in flour and baking powder, adding gradually to form a stiff dough.

Place dough in a greased bowl, cover and refrigerate for at least 2 hours.

Cut the chilled dough into 4 parts, removing only one part from refrigerator at a time. Place the ball of dough on a floured surface and sprinkle flour over the top. Roll dough to 1/4” thickness for cakey cookies, or thinner if you like them crisp. If the dough sticks to the rolling pin, sprinkle on a little more flour. Cut with cookie cutters. Bake on ungreased sheet pans in a 375º oven until edges are lightly browned. Cool on a wire rack.
